Mozzarella-Stuffed Meatballs

If necessity is the mother of invention, then necessity-to-empty-out-fridge-freezer-and-cupboards-before-moving-out is the mother of molten-cheese-related-greedy-invention. Not quite so catchy, is it? I think I can see why the original phrase has stuck around for so long.

Anyway, this is just a quick update on our normal meatball recipe. What could be better than meatballs in a rich tomato sauce? Meatballs stuffed with mozzarella in a rich tomato sauce. Adding more cheese is never a bad plan.

I wish I could claim some exalted inspiration for this, but it all boils down to having too much cheese in the fridge. Sometimes the contents of the fridge act as a spur to push yourself to the limit of culinary experimentation. And sometimes they're just a reason to eat more cheese .

Either way, this was very simple and very indulgent. Make normal meatballs and form each meatball around a small cube of mozzarella, before frying, saucing and eating as normal. Emptier fridge = fuller stomach. It's a simple equation.
